Waffled paddy's!

Waffled Corned Beef Hash!

This week, we take our corned beef leftovers and after playing with our food we create a corned beef hash upgrade. This might be an option if you have waffle iron that’s waiting to be played with. After making corned beef in the instapot, we rendered out some of that corned beefy goodness with an onion and green pepper, combined it with tator tots and walked away with a delicious upgrade waiting for two over easy eggs.

We watched the Stranger Things Season 3 trailer, briefly mentioned Pokemon and changed things up where we went headfirst into the recipe. The Recipe for 2 "Waffles"

  • 50-60 Tots Divided
  • 1/3 Cup Onion diced
  • 1/3 Cup Green Pepper diced
  • 3 Slices of Corned Beef
  • sliced fat from leftover corned beef (optional)
  • 1/8 Cup cooking liquid (optional)
  • Olive Oil for cooking
  • 4 Eggs


Directions:

Cook Pepper and Onions in olive oil / butter with sliced off fat from leftover corned beef. When veggies are translucent add diced corned beef. Cook for a minute. Then drizzle in a drop of cooking liquid, remove from heat and move to the side.

Warm up waffle iron. Create layer of tator tots in waffle iron. Sprinkle / intersperse ½ of cooked corned beef mixture. Set waffle iron for 6 minutes and cook two over easy eggs. Carefully remove “waffle” and place eggs on top & finish with sliced green onions, chives or parsley.
