Halal Cart - Style Chicken & Rice

This week, we take on the NYC cult classic late night dish, The Halal Cart Style Chicken and Rice Plate. Inspired by the Serious Eats Website, we had a great time making this dish, eating it and talking about it on episode 041. We also talk about Lego Movie 2, Sex Education, Big Mouth & The Umbrella Academy. After a buzzfeed quiz kerfuffle, we abandon ship and talk about the Really, Really Weird, Ice Cream Flip Challenge.

Ingredients

Instead of Cooking in Pan for first cook, try doing it on the grill (Especially if you sub out Chicken Breasts for Thigh Meat)

*Special Note: Below are replacement recipes for white sauce and a slight modification to the original recipe. Sara and I both opted for using chicken breast instead of chicken thighs. In addition, we found the sauce to be too sweet and slightly too much mayo-ee? After some good "internetting," we found some upgrades below. Check 'em out and choose the one that you feel most comfortable with.


GRILL

  • After removing chicken from marinade, cut the chicken into ½ to ¼ inch chunks.
  • Clean grill and lightly oil grates with veg oil. Heat grill to high heat. Cook chicken approximately for 3-4 minutes per side (flipping once). Spread chicken out so that it gets nice and browned on all sides. Transfer chicken to cutting board.


Ingredients

Chicken

    • 2 tablespoons fresh lemon juice
    • 1 tablespoon chopped fresh oregano
    • ½ teaspoon ground coriander seed
    • 3 garlic cloves, roughly chopped (about 1 1/2
    • tablespoons)
    • ¼ cup light olive oil
    • Kosher salt and freshly ground black pepper
    • 2 pounds boneless, skinless chicken thighs, trimmed of
    • excess fat (6 to 8 thighs)
    • 1 tablespoon vegetable or canola oil


Rice

    • 2 tablespoons unsalted butter
    • ½ teaspoon turmeric
    • ¼ teaspoon ground cumin
    • 1 ½ cups long-grain or Basmati rice
    • 2 ½ cups chicken broth
    • Kosher salt and freshly ground black pepper


To Serve

    • 1 head iceberg lettuce, shredded
    • 1 large tomato, cut into wedges
    • Fluby pocketless pita bread, brushed in butter, lightly
    • toasted, and cut into 1 × 3-inch strips
    • Harissa-style hot sauce, for serving


Thrillist White Sauce

    • 1 cup mayonnaise (try to find one made of only egg yolks, not whole eggs)
    • ¼ cup water
    • 2 tablespoons fresh lemon juice
    • ¼ teaspoon ground caraway
    • ¼ teaspoon ground sumac
    • ¼ teaspoon ground cardamom
    • Just a sprinkle of ground turmeric
    • Pinch of xanthan gum\
    • Freshly ground black pepper to taste


Reddit White Sauce

    • 1 Cup Cottage Cheese
    • 1 Cup Sour Cream
    • 1 Cup Mayonnaise
    • 1 Cup Yogurt, Drained
    • 2 Tbsp White Vinegar
    • 1 Tbsp Olive Oil
    • 1 Tbsp Tahini
    • 1 Med Cucumber
    • 2 clove Garlic
    • 6 fresh Mint Leaves
    • 2 sprig Dill
    • 1 tsp Salt
